Potato Salad Recipes: New York Style

I love potato salad recipes. Everybody makes theirs a little different. A couple of days ago, I shared a simple potato salad recipe that I love. I like hard boiled eggs in my potato salad, but my husband prefers celery and carrots in his. So on that note, I’m going to share another potato salad recipe with you in case you prefer New York style potato salad recipes.

Okay, are you ready to get busy New York style? Let’s get started!

What you’ll need:

2 pounds of potatoes
1 stalk of celery (diced)
1 carrot (shreds, peels with potato peeler)
3/4 cup of mayonnaise
1 tsp vinegar
salt and pepper to taste (try a dash of celery salt too!)

1. Clean and slice your potatoes into small cubes.
2. Place your potatoes in boiling water, and cook them for approx 15 mins. You want them to have some firmness, so they still hold their shape, but you want them to be tender. Drain your potatoes when they are ready.

*Chill your potatoes for an hour, otherwise they may get mushy when you mix them.

3. If you haven’t all ready, dice your celery into very small pieces. I prefer mine to be about the size of my pinky nail. It’s an easy reference guide.
4. Take a carrot and get a potato peeler. Start stripping off peels of carrot. I prefer thinner peels, and if I’m in a hurry, will use pre-bagged matchstick sliced carrots.
4. Add your vinegar to your mayonnaise and stir together.
5. In a bowl, combine potato cubes, carrots and celery.
6. Pour mayonnaise mixture over your chilled potatoes, carrots and celery…so that you coat the ingredients.
7. Lastly, season your potato salad with salt and pepper. You may even want to try something like celery salt, or a garden spice mixture to give it a little kick!
