Potato Casserole Recipe

Here’s a delicious potato casserole recipe you’ll want to try out. I’m a potato fanatic! Seriously, I could eat potatoes every day and be happy! Here’s a great twist on a side dish that your family will rave about. This simple potato casserole recipe is a snap to make, and will leave them begging for more.

Here’s What You’ll Need:

2 cups of mashed potatoes (instant or homemade are both fine)
1 package of cream cheese (8 ounces)
1 can french fried onions
2 eggs
1/4 cup seasoned bread crumbs
1/4 tsp salt
1/4 tsp black pepper
2 tsp grated Parmesan cheese

(onion optional- my son doesn’t like onion, but I do. You can dice half of a small yellow onion to add in)

Heat your oven to 350 degrees

Combine your mashed potatoes, cream cheese, eggs, bread crumbs, salt and pepper together in a bowl. Mix them well, until all combined.
You’ll set the french fried onions and the Parmesan cheese aside for now.
Spray a casserole dish with cooking spray or grease with butter.
Pour your ingredients into the casserole dish.
Sprinkle the Parmesan cheese across the top of the casserole.
Next spread the french fried onions over the top of the casserole.

Bake at 350 degrees for 20-30 minutes. I prefer a more well done casserole, but go by what your family enjoys! I just love a little crisp.
