Egg & Potato Recipe
This egg potato recipe I fondly call the “kitchen sink”. It’s not a beautiful dish that people will eye up and go, wow…that’s gorgeous, but it is a healthy dish that will have your family asking for seconds! I just whipped this up this morning, and my husband was raving how even such a simple dish tastes so good when cooked right!
For 2 people:
You’ll need 4 red potatoes and 4 large eggs.
Wash your red potatoes well. Cut your potatoes in half, and then lengthwise halve them again. Slice thin slices of potato. I am for them to be about the size and thickness of a quarter.
Spray a large fry pan with olive oil, and let the potatoes start to brown. Flip the potato slices over when browned, and while they are starting to brown on the flip side, break four large eggs over the potatoes. Yup, right over top of them!
When the egg starts to firm up, flip the entire mixture, flipping a couple of times, until all the egg is cooked. By this time, your potatoes are ready as well. You can also mix in onions and peppers if you’re so inclined.
Serve up on a plate, add a squirt of ketchup, salt and black pepper to season and dig in!
Egg & Potato recipes don’t have to call for wads of butter, deep fryers, or anything other than themselves and a touch of olive oil!
