I love potato salad recipes. Everybody makes theirs a little different. A couple of days ago, I shared a simple potato salad recipe that I love. I like hard boiled eggs in my potato salad, but my husband prefers celery and carrots in his. A simple potato salad recipe you can follow, makes a great treat for your next picnic.

What you’ll need:
4 regular potatoes or 6 red potatoes (your choice)
4 hard boiled eggs
1/2 of a red onion (I prefer it diced into small pieces)
1 1/2 cups mayonnaise
1 tablespoon spicy mustard
Seasonings to taste…I prefer just simple salt and pepper with potato salad
